There is a wealth of exceptionally interesting and sensible information which rails against modern ideas and living. Unfortunately for those not involved with big pharma or big agro the clinical studies will never happen due to their cost. Observations of indigenous diet and it's relationship to health and genetic makeup are useful guides. At the rate that even far flung populations are switching on to processed foods and losing their roots, it will soon be very difficult to even find someone who remembers the old ways. The four pillars idea is something I feel will serve many people well, and the idea of food as a stream of information is a concept that I feel more people should try to understand. I would heartily recommend this book to others.

Unfortunately out of print this long while, Irish Traditional Food is perhaps the best of Irish cookery books. Dealing with recipes from 16th century and stopping somewhere 'round the 1950s, this is a no non-sense guide to the real food of Ireland with none of that quare foreign stuff that we started aetin' (but never learned how to cook properly) in the last few decades. You'll find no ciabattas or currys here or 'healty lifestyle' foods, but lots of oats, cream, goose fat and crubeens (pigs feet). And if you like your tripe & offal, you'll be happy as Larry.

Shellfish & spuds and some more humble ingredients like nettles & watercress are all covered in great details, not to mention a very impressive chapter on baking.

Overall, don't mind all the fancy pants who currently hold the spotlight on irish cooking, Fitzgibbon's book was around before them and still hasn't been ... full review

Good essential knowledge and opinion about fermentation, and other natural food-making. The author conveys well that her experience over many years has contributed to the book. Note that the measures are all US imperial and not translated into UK/European.

I am surprised that no-one has provided a review for this book. It provides an incredibly comprehensive review of traditional foods and food products and the social history around them. Each food is provided with a description, history, technique and (commercial) production. The descriptions are concise and precise giving sufficient information to visualise the food, especially when combined with the technique. Traditional foods rarely have just one method, diversity and variation being of the essence, and the book acknowledges this by giving information about the range of variation. This book does not set out to be a recipe book, although proportions of ingredients are sometimes given. It serves a different function; to record what people ate, the reasons and the range. To this end it includes histories, which are well written, coherent and clearly well researched.

When you un pack your product box note that there are two firm tubes of cardboard standing up, tightly placed, holding the scales steady, you push those out to begin the set up. Then you'll need a cross thread screw driver to attach the cradle/basket arrangement together to the scales.The shallow silver bowl is fine for domestic baking but of course not big enough to contain something like a leg of lamb or a huge haul of soft fruit that might weigh towards the top end of the scale, so use whatever large and suitable container you need by setting it atop the basket and manually turning the dial back to nought, then add the ingredient to be measured.

I find the way the dial is drawn to be a bit short sighted as most weighing is done around the one lb, one kilo range and the little lines are so ... full review
