The recipes are great but I had to adapt oven timings on all three recipes I tried as my oven doesn't seem to get hot enough! I found the breads all needed about ten minutes longer, so you may find you have to fiddle with timings as well. All the breads 'worked' so I'm happy!!

FYI Needs to be seasoned as all stoneware before first use. I did it with olive oil. Just rub it with a towel then in the oven for 2 hours on high temperature and done. Gets very hot, so use oven gloves to handle.

So I have never made bread from scratch before buying this book. In fact I'm rarely found in the kitchen, because I'm a terrible cook. But a friend kept posting smug photos of amazing looking bread she had made from this book on social media so I thought I would give it a try.

First off, it is a bit of an outlay if you don't have a well-stocked kitchen. I had to buy a casserole dish and a thermometer in addition to the book.

But wow is it worth it. He suggests buying fine flour but with Tesco own brand strong white flour I've made a fantastic loaf.

The instructions are extremely through and if you Google "flour water salt yeast" "ken forkish" and "youtube" you will also get some videos showing you every stage to go with the written instructions.

Brilliant book. I could never fathom out making bread from scratch and have been used to using a bread maker, but this explains traditional bread making really well.

Really nice my mother had one when I was young and now I have one, brilliant for bread baking and the bread stone is a nice addition and helps to give a great crust on the bread.

The author's endearingly chatty & encouraging style make "Bread" an easy & enjoyable read. Not quite 5 stars because there is no recipe for a multi grain & cereal loaf, & was so hoping for one in this book.His"100 Great Breads" doesn't contain one either,much to my surprise,so I've concocted my own & with a few tweaks each time I make it, it's getting there. Should anyone know of a good
recipe I'd love to hear it.
Photo's are generally excellent but the secret of handling the essentialy "soft sticky dough" (see pg.25) even on an oiled surface,
which works wonders, leaves an important missing link before it is properly kneadable & becomes a "smooth ball with a taut skin"!
Paul's fingers are still sticky on one hand,but the dough is obviously much easier to knead than when it's in & all over,my hands.
Despite that, he insists that the handling becomes easier & faster ... full review

"Inspirational and exciting - an all time favourite!" - by J. Baron
This is a great book, and as other reviewers have said, it is clear, beautifully written, great photographs, and offers an almost fool proof method for creating a leaven. Some of the recipes are a bit different from usual but that is what makes it fun and interesting. It gives you a really good grounding in the different approaches to bread making, and is a lot less complicated than some of the other artisan bread books.

I'm revisting this review today because I still bake bread, I have a lot more books on the shelf too, but this very first book to inspire me has remained one of my best friends. I love the way it is written; the stories of Dan Lepard's exploration of the different styles of baking; the lives and images of the people he met who welcomed him into their homes and workplaces. ... full review

At last after trying so many different ways I have found one that keeps my home-made bread fresh and does not eat up kitchen space. Not sure about the spacer I do not like using plastic as nicks can get into the bread.
