Over the years I have had a few types of pressure-cooker, some with "wind-up" things on top, some with a knob to set the pressure but all gave problems after a little use. Many years ago I inherited a cooker from my Mother, it had a simple weight to control the pressur and as long as you lived in an area with "gravity" it worked a treat (I think most places have it these days!). We took it to South Africa and had to get another weight (the area we lived, Jo.burg is 6000 feet above sea level so the atmospheric pressure was less), but it still worked OK. After struggling with technology I have decided to go back to the old-fashioned control system, why did I wait so long?
