Bought rhis perhaps 30 years ago! You do need to practice on a few different veggies to get the knack. Experiment, Experiment, Practice, Practice. For example just now, making coleslaw, I had to move the carrot to go from round slices to long thin strips (which I wanted). I still refer to the little guide book to choose the right insert. It is very sharp and until confident do use the handle. Especially with small objects always use the Handle. Everything rinses off in cold water. I'm absolutely sold on this and am about to buy the ROKO attachment for fine slices.
