As a rye bread addicted household we eat a loaf a day. Sounds impressive until you realise most of the hard work is done by the bread machine.

Love having it delivered to the door on a regular basis without ending up with arms trailing to the ground having humped it back from the supermarket or paid exorbitant delivery charges.

Of all the Rye flours I have used think this is my favourite. When baking 100% rye it somehow seems a tad less brick like (strangely that is part of the pleasure) and a bit more flavoursome.

Hello

The bread maker I have is the Panasonic SD-2501 which has a special rye kneading blade which is one of the reasons I chose that model.

The rye programme takes 3.30 hrs and I have always found the bread excellent. You can also use the time delay so you can put the machine on last thing at night and the bread is ready in the morning.

I haven't used sourdough to make bread in the machine although I believe you can. I use Dove Farm's Quick Dried yeast which I get from Waitrose or Ocado

I know rye is gluten free. Fortunately no-one in my house is gluten or wheat intolerant so sometimes I make pure Rye, sometimes 50% rye with either strong white flour or wholemeal flour. I often add some mixed seeds as well. Particularly sunflower and fennel.

They are all good!
