Although not vegan (I eat some fish, dairy products and eggs though never meat) I found this book marvellous.
You will probably need a well-stocked health store or supermarket to get some of the ingredients, but if you have an Asian/Chinese supermarket then you'll find all the ingredients easily and pretty cheap too. Once you've got the basic ingredients (most of which last for year or more) the rest is just buying in-season veggies, etc.
Most of the recipes are simple to prepare, which is a boon compared to some other Japanese cook-books where you can spend 5 hours in a kitchen preparing the ingredients and cooking!
I'd like to see an update of this book - there are so many other meat-like substitutes available commonly these days which easily can replace some of the ingredients.
It's a brilliant introduction to Japanese cooking, showing how it need not be too fussy to prepare and cook. I'd recommend it to anyone who likes Japanese food, even meat eaters.
Oh, and you'll lose weight eating this sort of stuff regularly and generally feel healthier.
