Looks good, but lacking a little,

I like this book, which I bought recently and look forward to cooking some of the great food it describes. However, I do think the book is lacking a couple of things:
A thorough introduction to the portuguese larder containing some of the key ingredients involved. The two pages that are included to cover this topic are not adequate in my view.
Organisation. I think the book would have been more practically useful if areas like Meat and Fish were presented separately and introduced. As it is, the instructions for preparing bacalao, for example, are repeated every time bacalao appears in the book, instead of being covered once in an introductory area.
Wine and Cheese - there is no mention as far as I can tell of the wonderful wine and cheese of portugal. While I understand the book is not about them they play a large part in Portguese cuisine and might have good mentioned in passing.
A thorough index would be beneficial.
