Where vegan baking is concerned you really can't go wrong with an Isa Moskowitz or Terry Romero recipe book! This book sits nicely in my collection alongside "Vegan cupcakes take over the world" and "Vegan cookies invade your cookie jar". Although called "pie in the sky" it also includes other desserts that you may not necessarily put in the "pie" category, like "cheesecakes" and open tarts. The recipes are easy to follow and like in their other books there are lots of helpful hints to help you bake like a pro! Before getting this book I was a bit scared of making pastry, thinking it was really complicated! The first pie I made was apple pie, and it was fantastic! Since then I've also made peanut butter brownie bottomed cheesecake, hazelnut chocolate tart and also banoffee pie. All have been delicious! The measurements use cups, as this is a US book, but measuring cups are easy enough to find in UK shops (such as Robert Dyas).
There are a few ingredients that are a little hard to find -agar powder being one (although I did notice you can buy it on amazon!)
Overall I love this book, and if pastry wasn't so fattening I'd be baking from it every week!
