This is the pan we use for just about everything. The base is, large, heavy and completely flat, so it's great for evenly distributing heat and sautéing your onions properly. This is our first stainless steel pan, and we've never had problems with stuff sticking to the base – just use enough oil, moderate heat and deglaze with a little wine or water. This pan is huge and heavy, and the flat base makes it feel even bigger – make sure you and your hob are up to it!
