This is a book by the man who filmed Hillary's conquest of Everest! During the expedition he developed an interest in exotic herbs and flavorings in India and Nepal, and pursued this interest wherever he lived afterwards. He has lived just about everywhere and has learned from the locals and has used that information to write the best ever book on what flavors foods. Was considering republishing the book myself and discovered just now that someone has already beaten me to it. Reviewed from the original Wine Societys printing.

I gave away my first copy of this and had to replace it. It's a veritable mine of background information on everything for flavouring: Herbs,including those no longer commonly used, spices, everything; including Marmite!

Every cook should have a book of this type, giving lots of information about more or less every conceivable form of herb or spice. Most of it is even correct. This is quite rare in cookery books.
