I am only moderately pleased with this book. Admittedly, it offers top end recipie ideas, but makes them unnecessarily complicated. It is not necessary to have a syrup for everything,
Sugar would often do as well. Having said that it introduces a lot of basic methods, which is useful. His recipies are more for big time caterers, who keep these syrups and pastries in the fridge as they use them daily. This way it makes sense to make a big quantity and store. But if you want dsserts just for one dinner party or one off entertaining they are unnecessarily
time consuming. Anyway, it gives you a few nice ideas.
