Bought this book for research during my college course training as a Chef...lots of great info and helped me through my exam and essay writing...

This is a coprehensive guide to the worlds best known cheeses. Each cheese is described in detail by country of origin,with information about method of manufacture,seasonal availability,colour, texture and taste etc. There are excellent photographs of most of the cheeses and a recipe section with ingredients and photographs of about 100 recipes. This is a definitive book on cheese and is well worth buying as a good reference book.It does not however cover the cheeses made by small local artisanal cheese makers for their own use or local sales.
