I came across this book by chance and at a good price so I bought it! I think that I will have a lot of fun with all the ideas from this book but I won't be following the recipes as they are written here! I love my own method of using gelifying sugar or brown sugar and agar agar which uses half the amount of sugar and only requires the fruits to boil for a short time, that suits me fine! My reson for not giving 5 stars is the fact that many of the recipes mention preserving sugar, then see method but I can't find the method anywhere, quite annoying! Maybe this book misses a page or something? I wish more books would mention the gelifying sugar method (what is the use to use more sugar than you need to....). I also wish they would include ideas to use the different kinds of preserves as some are quite unusual. Other than that there are loads of photos and the book seems really interesting!
