Not light reading this one! If you are going to do it properly (making authentic and top quality products) then this is a book that you'll need to have under your belt! I refer to it all the time!

Anybody that is serious about smoking and curing meat should read this book.
Seems a little technical in places but is very informative and covers food safety
very well

If you want a guide to making Polish sausage this is it. Brilliant wesite which the book backs up excellently. Cant wait to make some Polish sauge.
