If you love bread, and especially if you want a "how-to" guidebook containing not merely hundreds of different recipes, but also techniques for all the main styles of bread from bagels to flatbread to brioche, this is it. Think of it as an encyclopedia of bread-making. This book contains recipes for rare and exotic breads that you won't be able to buy in any delicatessen - you either make them yourself, or go without. Whatever type of bread, from whatever culture, this book has it. This is an invaluable guide to the whole subject and well worth it's price.

I have been collecting this series for several years, and have 27 titles.

I find them to be thorough. extremely well-laid out, with very helpful visuals.

Very practical and eminently useable.

Unfortunately, the recipes are neither good nor visually appealing. I would not recommend for an experienced baker. However, for a novice, I believe it is a good book of basic recipes and techniques.

Excellent step by step instructions with clear photographs in first part of the book and interesting recipes in the second half. Explanations make sense. Recommend to bread bakers.

I was informed that this book would be delivered between 11th and 20th January 2011. It is 2nd February and the book has still not been delivered. The fault is with the vendor and it should be noted that Amazon has acted honourably. If it wasn't for Amazon's A to Z Guarantee programme, I would have had problems. Therefore, full marks to Amazon and no marks to Alibris USA.
