Beautiful but disappointed by recipe measurements

This is a beautiful book that is visually up there with the best of them. The writing is clear and the essays interesting and engaging.
However, I honestly cannot believe that a restaurant such as this uses 'cups' as its main form of measurement and I fear the recipes have been dumbed down for the American market where the struggle with the notion of scales. Really has ruined the book for me as I would not attempt any of the pastry recipes due to the high likelihood of variances in both measurement and final product.
