I bought this when it was first published because it was highly recommended in reviews and I'd recently become a vegan. My original copy is now falling apart because it's had so much use! Although the recipes produce real gourmet vegetable dishes, the author doesn't rely on long lists of obscure ingredients, just those you can buy at any decent UK supermarket. It's really great to have such inventive recipes for vegetables, proving that you can eat well and healthily without animal products, and that vegetables aren't boring. My favourite recipes are the parsnip and orange soup, and the savoy cabbage with marmalade - both simple to make, and both brilliant!
