About the Author
Tom Kerridge worked as a chef in restaurants across Britain before deciding to set out on his own and take over a rundown pub in the quiet Buckinghamshire town of Marlow. He opened The Hand & Flowers with his wife Beth in 2005, and it went on to become the first (and only) pub in the world to acquire two Michelin stars. In 2014 he opened a second pub in Marlow, The Coach, which was followed by The Butcher's Tap. More recently, he launched Kerridge's Bar & Grill in London and The Bull and Bear in Manchester. His previous books include the bestselling Proper Pub Food, Tom Kerridge's Best Ever Dishes, Tom's Table, Tom Kerridge's Dopamine Diet, Lose Weight for Good and Tom Kerridge's Fresh Start and his most recent bestseller Outdoor Cooking. I was delighted (reading this on the Kindle App on my iPad mini and on my Kindle Paperwhite) to see that it retains the character of the book with full colour images (iPad mini).
The first few pages with white text on a dark background are very hard to read, however, thankfully when one gets the the recipes then they are plain text on a white background and so a joy to read.
Some reviewers have mentioned that there is not a searchable index, this is probably because you can use the goto function to navigate from recipe to recipe with ease.
There is an image of each dish after the recipe.
So, why on earth do you need yet another cook book?
Well the things I love about this book are...
All of the recipes that I have tried have really delivered on flavour
Some are unbelievably good such as the one for onion gravy
There are great recipes for sauces and side dishes
The recipes are very clear and easy to follow
The results I have been getting are consistently good
There are odd recipes that use harder to get ingredients but the ideas and the methods can transfer to more easily available ingredients.
This is a superb book, which is very well priced for Kindle users.

I like his food and his attitude to cooking, especially the way he has managed to elevate pub-grub to such a level yet still make the food accessible to people who enjoy cooking and wish to reproduce his recipes. This book contains 130 recipes and I could easily eat every one of them, including crispy pigs ears; the recipes are clearly explained and relatively straightforward to follow. The book is divided into 6 main sections, Breakfasts, Soups and Salads, Starters and Snacks, Fish, Meat and puddings with a section on basics for sauces, curry powder mix, pickle mix, Soda Bread and Mulled Cider. The photography is good, although not every recipe has its own photograph, you still get enough to show you what the dishes should look like on the plate. The recipes are interesting and tempting and Tom wastes very little, making good use of all the ingredients especially from pork. Some of the recipes are close to the up-market street food that is currently popular and he has managed, with expertise and panache, to make pub food something special without taking away its essential element of earthiness and popularity, but improving on what is already good. A fantastic cookery book, in my opinion.

Having also been lucky enough to have also been guided by the Great Godfather of Modern British Gastronomy myself I can see that in some of the things Tom Is producing there is a little Stephan Bull or at least the thinking behind the balance of the dish that Stephan would install with his fantastic knowledge of great food its so great to see Tom really putting it "Out There"
However, you won't find many Chefs that have achieved the dizzying status of The Hand & Flowers, Tom Kerridge's restaurant in Marlow which was the first pub in the UK to be awarded two Michelin stars.

The frustrating result is that the next time you can book a table there for dinner on a Saturday night is September, 2014 (assuming you are happy to pay up to £36 for your main course).
While waiting for your booking, some consolation can be had from Tom's debut cookbook, which offers the chance to re-create his food at home.
The title is slightly disingenuous, with its suggestion that this is everyday stuff you can "knock up" without too much fuss. In fact, it is thoughtful, creative, lovingly-crafted British food which combines simplicity and sophistication.
For every homemade pork pie with piccalilli, there's an oyster fritters with seaweed mayonnaise; for every fish and chips, there's a spiced monkfish and aubergine purée with green olive dressing (try asking for that on a Friday night at the George & Dragon).
Even modest-sounding dishes, such as `proper' baked beans on toast and the version of chicken in a basket, below, require a bit of forward planning.
Scrambled eggs with English truffle is straightforward enough, but you have to put the eggs and truffle together in a bowl for at least 48 hours before cooking. This isn't to say the recipes are daunting. They simply require care, attention and the best possible ingredients.
Watching Tom Kerridge cook in the television series which accompanies this book has been an absolute delight. His enthusiasm and ease in the kitchen are infectious - and his generous girth is much more reassuring than those chefs who are whippet thin
This will go down in history as a Gastro Pub Master piece like White Heat was to 80's Gastronomic Dining....

Kerridge knows his stuff, not for nothing he has a Michelin starred pub or won the "Great-British-Menu"-contest twice. For example he helped me to perfect my triple cooked chips and there's lots more in this book I'd like to try. But the recipes are not always simple, partially you need special ingredients (from your butcher or fishmonger) and lots of time. "Proper" here means "high quality" and not "rustic" as you might expect from pub food. But if you are an ambitious (home-)cook this book is very useful and you can treat your guests, friends and family with great dishes.
