5.0 out of 5 stars A book worth your investment, 9 Mar. 2013

Diana Henry's book is an excellent guide- both in terms of recipes and tips - for the novice in smoking and pickling, but is also an enjoyable read- almost poetic at times, evoking smells, tastes and scenes of a bucolic english countryside, or a table laid with zakuski in Russia, or with eastern and middle-eastern delicacies. The recipes are easy to follow and the end-result amzingly good.
Things such as these bring back fond memories and are an integral part of what good life should be.

1.0 out of 5 stars A waste of money, 25 Sept. 2012

The « Dehydrator Bible» is really a misnomer, as some buyers have pointed out, because it is not a guide on dehydrating foods, which requires a long process of learning, namely by trial and error. This book does not help you to overcome the initial mistakes and pitfalls of a novice: even the basic techniques are not dealt with in detail for those, like me, who bought the book as a manual (or «bible», if you like) on the subject.
The accent is definitely on the 400 recipes it boasts of, in which I was not the least interested. So if you are looking for a initiation on this subject, buy instead Mary Bell's Dehydrator Cookbook, which is a much better buy, although a little bit outdated.

Délices déshydratés : Cuirs de fruits, Chips de légumes, crackers

5.0 out of 5 stars A good acquisition, 25 Sept. 2012

This book takes dehydration to a different level - as art, applied to cuisine. It goes far beyond the recipes - and techniques for which it was probably also intended - and gives you a glimpse of what you can achieve by applying your imagination, once you have mastered the technique of dehydrating foods.
I would strongly recommend this book for those who like to be creative in cuisine.
