If you are starting from scratch do not buy this book. There is no doubt that Mr erlandson knows his stuff, the problem he has no idea on how to impart that knowledge onto the reader. I found the information very poor, for instance there is very little information on the benefits and flavours provided by different woods. Also hardly a mention on how to produce wood smoke (essential for the process)at the correct levels and for the duration of 5 minutes; let alone the 24 hours required for some of the recipes. I wish i had spent the money on a couple of packets of tescos finest kippers. I suggest you do the same. I used the book to lightly smoke a couple of french partridges that happened across my garden one october afternoon.
