5.0 out of 5 stars The MUST HAVE book on cooking with spice, 15 Nov. 2014
Cracking collection of recipes from THE Spicemeister Supreme. Arun draws on his Anglo-Indian background and his Irish experience to produce a brilliant book that everyone should own. He describes himself as a home cook, but when stars like Simon Hopkinson, Pierre Koffman and Fergus Henderson endorse him and Madhur Jaffrey love his spices and recipes he is something special.

The recipes are not just Indian, they draw on a whole host of cooking traditions and add flavour and zest to them all. This really is a book that is just as much for the home cook as the professional and every recipe has been tested to ensure that it is achievable.

Some great information about spices and how to create your own blends mean that you will use it again and again. Arun's philosophy is that spice gives vibrancy to food be it The Full Irish Breakfast or a range of drinks and desserts and following the recipes will transform your cooking.

You really must get a copy.

This flour fully met my expectations, and more importantly my customers loved the breads. As a micro-baker concentrating on good real bread quality of ingredient is paramount. Bachelorette Mill flours never let me down and their provenance is strong.

Try it, you'll love it.

5.0 out of 5 stars Rants that uncover the cult of Celebrity Chefs, 3 July 2013
Verified Purchase(What is this?)
I really enjoyed Down and out in Padstow and London and the follow up Down and Out in South East Asia so this was a must when I heard of its release. I was not disappointed.

Taken from articles on the Chef Sandwich blog this book takes a hard, and insider's, look at the cult of celebrity chefs.

Well written it is incredibly funny but reveals all the foibles of our most viewed celebrity chefs, and takes a good swing at Critics and Bloggers en route.

Voilence, shoplifting, unhygienic habits and utter megalomania are all ingredients in this hot dish of a book.

You'll never look at Tv Chefs and presenters in the same way.

Five (Michelin) stars from me.

5.0 out of 5 stars Hasta La Revolucion!, 4 April 2012
This review is from: Bread Revolution (Hardcover)
I bake bread on a regular basis and have several books on the subject but this new offering from Duncan Glendinning and Patrick Ryan is one of the best.

Written as much for the first timer as the regular, and with nice introductory paragraphs explaining the breads and the boys own experiences with them, the book lays out the tools needed - nothing too complex or expensive and then leads to your first loaf. They get more technical as the book progresses and involve both sweet and savoury breads.

Helpful pages and diagrams explain the different dshapes of bread and how to achieve them, glazes, addtions - many foraged and finally how to use any leftovers - but given the quality of the breads there probably won't be any.

Though I have baked often the first loaf I made from the book was my best ever, it rose well, had a lovely hollow ring when cooked and a crisp crust with a soft crumb.

Whether you are about to bake for the first time or an old hand the sheer passion for real bread shines through the book and it will, as the title suggests, lead a Bread Revolution.

5.0 out of 5 stars Made me re-think, 2 Nov. 2011
As someone who has always gone for classic flavours and dishes often using cheaper cuts of meat and long slow cooking this book was a revelation.Every recipe is quick, hence the "Flash" description and healthy to boot.
Laura is concerned with getting really fresh taste combinations to enhance the flavours and vibrancy of every dish. From Rubinades (a cross between rubs and marinades) through Pastes, Finishing salts and Dressings a whole galaxy of fresh vibrant flavour is unleashed. The additional tastes to be gained are categorised into Western, Indian Middle Eastern etc meaning that one dish can be served several ways and all in search of that other great taste Umami.
Most of the meals you eat are given the Flash treatment from Breakfasts to Suppers with Fish Flesh Soup and Desserts all getting a makeover.
A very useful series of taste combination primers and a glossary of global ingredients helps menu planning with advice and background information scattered throughout the book.
I have tried a n umber of recipes and like the results, so does my wife!!

The book is subtitled Fit Fast Flavours for Busy People and does what it says on the cover. Though I will never give up my slow roasts I have a new battery of food that is fast yet fresh and healthy.

There is no excuse for not cooking if you have a copy of this little gem

5.0 out of 5 stars Ideal stocking filler for the cook/foodie in your life, 27 Oct. 2011
This is one of those handy little books that combines both really useful tips:

"To sterilise your kitchen cloths and sponges - microwave them on high for a minute"

or

"Don't just season your salad dressings, season the salad itself before dressing it"

and lovely little quotes:

"The only time to eat diet food is while you are waiting for the steak to cook" (Julia Child),

"Cauliflower is nothing but a cabbage with a college education" (Mark Twain)

Notebook sized, but with just under 200 pages, this will appeal to most cooks, from the beginner to the most experienced. Wit and wisdom are served up in bite-sized pieces and are easily digested.
