Excellent book, 7 Mar. 2012
This is one of the must-have books about bread. Do you need to understand how fermentation works? Do you need great recipes? and what about preferments, their science and the best way to use them? You have it ALL inside. If I had to choose one book about bread, i would definitely choose this one.
