Two that aren't jazz spring to mind:

Van Morrison - Astral Weeks.

Grateful Dead - Reckoning (live 1980). Phil Lesh is still playing electric bass but otherwise is more or less acoustic guitars, brushed drums, percussion and piano. Much prefer this to its electric companion Dead Set.

Probably my all-time favourite 100% acoustic instrumental albums are:
The Transfiguration of Blind Joe Death
The Yellow Princess - both by John Fahey

So many so-called acoustic albums use amplification even if it it only the bass.

I'm very fond of these two guitar albums;

Michael Hedges - Aerial Boundaries

John Renbourn - The Nine Maidens

but there's loads of brilliant acoustic music using a variety of instruments and styles, including jazz, folk etc.
