This is the fourth Wusthof knife I have bought (Silverpoint 20cm Chef and Paring Knife and Classic Utility Knife) and the most expensive. It's also by far the best. If you are looking to buy a "higher-end" chef knife, I can recommend this one 100% (but of course you should always try to handle one first to see if you like it).

The handle on the Classic Ikon is much more comfortable that the regular Classic and fits the hand without causing any stress even in long sessions. The bolster has been removed from the rear of the blade so it is a lot easier to steel the entire length of the blade.

The blade itself is, as you would expect, VERY sharp. One of the things I had read about the Classic Ikon blades was that they didn't hold an edge for very long and it was "quite hard" to get the edge back to very sharp, but I haven't found this to be the case at all. As long as you keep the blade at the right angle on the steel, it returns to a very sharp state, quickly. I have not noticed the edge losing its sharpness over a period of hours;I don't know if this is true if you were using it in a commercial kitchen where you might be using it for a lot longer than that.

This knife is quite heavy with more weight in the handle end but I have done a lot of quite delicate work with it easily and I can't find anything negative to say about it. It is quite expensive for a home cook like me, but this knife will last you a lifetime and is worth every penny.

My wife bought me this cooks knife for Christmas after I have been using the smaller of the Wustof cooks knife for quite some time. These knives are a pleasure to use, being a perfect balance and comfortable handle. The blade is weighty and glides through chopping. As this is the second Wustof knife I have purchased, I would would consider myself brand loyal!

This is the first Wusthof I have ever owned, tried a few others from other chefs before, and it's fantastic. As a professional chef it does everything I need it to; holds a sharp edge, has the correct amount of weight and handles perfectly.

Noticed a few comments making reference to it losing sharpness. I have noticed that I'm not able to get it back to the edge it had on the day I got it, however it can still be sharpened to a ridiculously sharp state so I wouldn't worry about that.

Having had this knife for almost 5 months now and using it for prolonged periods I can't recommend it enough. With all knives though you should feel it for yourself before buying. As long as you look after the knife, the knife will look after you.
