You add your own ingredients, mix together by hand, allow to prove, then fold up and put in the oven, it couldn't be simpler.
The trick is, of course, to know how to bake bread by hand. I'm definitely not an expert, but I'm wise enough to know that most recipes that come "in the box", are really just to get you started. I picked a bread recipe from Cook Simply Everything (most cookbooks will have something), and gave it a go. It's hard to know how much you can fit in one go, so I've started with small loaves, and will work my way up. I also mix my pizza dough in it as well.
Despite looking a little gimmicky, I think this will come in handy for a few scenarios - 1. If I would like to bake some bread at short notice (I have a breadmaker, but that takes 4 hours), 2.- If I'm travelling and I'd like to bake while I'm away, because it's soft and bendy, it will pack easily.
If you want to experiment with your bread making, but don't want to risk wasting kilos of ingredients, this might be just the thing for you.
When I got the Lekue thing out of the box, it looked pretty thin and floppy, and I couldn't see how it would work well. However, I got to work with a basic white bread (based on 500g flour, for size context).
As a bowl, it stands up more stably than expected due to the shape and also to the matte exterior. It is very easy to combine the ingredients in the bowl and there is no sticking, due to the glossy interior surface.
Once the dough comes together, it is easy to knead it inside the bowl, since the sides are flexible. This saves on cleaning the worktop, and also means that your bread recipe won't be altered by the addition of flour or oil while kneading.
After kneading, it takes literally 5 seconds to fit the tab into the slot on the side of the bowl and create a proving basket. You end up with small openings at each end, but this doesn't cause the dough to crust while proving. Once proving is complete, knocking back the dough and reshaped can, once again, be done in the bowl, and the flap closed again to prove before baking.
The flap doubles as a carry handle, so it's easy to move the 'tin' to the oven without disturbing the dough, and also easy to remove it safely from the oven once baked.
The result of my first bake was a perfect oval loaf, evenly crusty and brown all over, with a soft even crumb. Easily the best loaf I've ever managed to bake myself. And there's no need to add water to the oven to create steam, due to the way the mould is shaped over your dough.Read more ›

You have no written instructions but the box comes with pictures of how it works it's nicely packaged and would make a really good present for someone. All in all very pleased and will use this daily, by the way the product says in very little letters that it comes with a ten year warranty what more could you ask for!!
I had wanted one of these for over a year until I finally found a good offer. Eventually I bought three of them - two for Christmas presents. I am gluten-free and have experimented a lot with baking. I want my breads to have the correct shape and texture. Gluten-free dough is less elastic than normal dough, so you tend to get flat breads. Usually you need to bake in a mould because the dough doesn't support itself enough. So all my breads would basically be square-edged from the mould.
I expected that the Lekue bread maker would make beautifully shaped breads which look somewhat like they were baked on a tray, not in a mould.
Did it meet my expectations? Not quite yet.
There are two problems: It seems to give less support than a stiff mould. And the bottom will become flat in the middle because this is where the weight is concentrated.
Also, the size is quite large, so you need to bake a large bread in order to fill it better. Then, with some luck, you may get the beautiful rugby-shaped bread you see on some images.
My first bread became quite flat and a bit square, as you see on the photo.
If you google photos, you will see that many breads end up having this shape, especially if they are based on coarse flour (which is less elastic than white wheat flour).
