  • Since 1985 Yalumba has been under the leadership of fifth generation family member Robert Hill- Smith who has taken Yalumba from a well-regarded fortified winemaker with a large, cumbersome wine portfolio, to one of the most respected fine wine producers in Australia.
  • The coopering of oak barrels is a proud tradition at Yalumba, with a coopering history dating back to the turn of the century. With oak playing such an important part in the winemaking process, Yalumba is one of a small group of winemakers around the world to exercise full control over the quality of oak used to age their wines.
  • The Yalumba Nursery began in 1975as a vision of the then Managing Director, Wyndham Hill-Smith and Chief Winemaker Peter Wall, so that they could a have greater control over grafted vine selection.
  • In the vineyard, Yalumba have a holistic approach to growing grapes. This is embodied in their 'Vitis Programme', which states a commitment to having minimal reliance on pesticides and maximum attention to environmental improvement.
  • Notes: This wine has juicy dark cherry, licorice spice and wild flower notes that lead into a brambly herbal savour with smoky earth tones. On the palate a dark mulberry and plum fruit appears with a succulent jazzy acidity lifting the gravelly fruit.

Product Description

Vintage 2012 in the Barossa could be summed up as a vintage without extremes, ensuring healthy balanced fruit. After harvest in march a combination of small 8 tonne and medium size 25 tonne static fermenters were used to ferment the grapes with natural or wild yeasts. The majority of parcels were then run to barrel, the result being a wine with excellent depth of colour, richness and complexity. Open while the lamb is in the oven and have a second bottle on hand. It comes with the vintage information as follows: Total Acidity: 6.5 g per litre; pH: 3.60; Total SO2 :100 mg per litre.

Palette Vibrant palette of dark fruits creating a well rounded savouriness to it. The palette is of dark bitter chocolate and medium to full depth of ironstone tannins through to the finish. A vibrant palette of nettles and lemon with crunchy acid. Precise and energetic palette with a refined purity of Shiraz showing the gravelly tannins and freshness. Fresh pineapple, Chinese white tea and dried figs lead into a creamy mid palate with a silky textural finish. A rich palette with the opulence of grazed fruit and cumquats leaving lingering flavours and a textured finish.
Occasion/pairing Enjoy with mushroom and thyme risotto or Moroccan lamb. Enjoy with beef or mushroom wellington with roasted root vegetables. Enjoy with a citrus dressed BBQ calamari salad. Pair with sage and rosemary crusted lamb with redcurrant sauce and a watercress salad. Pairs with harissa chicken or crispy rice pancakes with potato and chickpeas. Enjoy as a dessert wine.
