Veuve Clicquot Demi-Sec is perhaps the House's most "classical " champagne; from the close of the last century through to the early 1900s, there was a definitive preference for sweeter champagnes

Unlike the Brut champagnes, Veuve Cliquot's demi-sec has a smoother effect on the palate, but all the fizz and "oomph" of the others. I've only a couple of times had the really upmarket champages, and not recently, so it is hard to compare them, however I'm happy to say that it is certainly a favourite with me, and works well if recorked with a pressure stopper and saved for drinking over a couple of subsequent evenings. It may sound weird to describe a champagne as "versatile", but that's exactly what it is!
If you're having a wedding and know that some guests don't really like Champagne (some people find it a bit harsh in the throat because they've tasted the Brut ones and think all Champagnes are the same), I would imagine that most people could toast the bride and groom with VC demi-sec because the Brut-ishness is knocked back a few degrees.
