Based from humble origins using locally-available produce, Scottish recipes have developed and spread around the world over time to the extent that many people might be surprised when they realise the true origin of a particular dish. Despite this, Scottish food remains somewhat under-appreciated within the culinary world-at-large, so maybe this book will enable you to get an inside view and see what things you may have been missing.
This a relatively basic book - no full colour illustrations, no fancy artwork showing chefs adoring themselves in a stainless steel oven reflection and no dream shots. But there is still an old-world charm about this book and it does, absolutely, provide a wide range of recipes and tips to help one make one's own Scottish food.
There are many recipes that I've never even heard of before, despite an interest in Scottish regional cookery, and this is an inspiration to head to the kitchen and try a few out.
Despite the practicalities and economics of paperback book publishing, it would have been nice to have at least a colour print insert showing the final dishes. It would not even be a trouble to have to alternate between the recipes and the "colour supplement" but one would have got a much better idea about the unknown food that one might be tempted to cook based on description and ingredients alone. If nothing else, one would have got an impression about how the authentic food should look like. But that is just a small mark against an otherwise excellent, value-packaged little slice of Scotland.
