This award-winning gluten, wheat and rice free flour is a carefully selected blend of wholegrain teff, sorghum and buckwheat with a little tapioca and potato starch, providing a source of protein and fibre. It contains no gums or strange ingredients. It was created by Vicki Montague, scientist and mum to a coeliac child, who wanted to feed her daughter wholesome nutritious food. It contains no rice (and therefore arsenic) and can be used to create delicious gluten and wheat free items such as bread, pasta, cakes, biscuits and pastry. It is perfect for anyone on a gluten and/or wheat free diet or anyone who wants to reduce their reliance on wheat. Recipe and usage information can be found at www.freefromfairy.com. Please note the instructions on the bag say you can store the flour for up to six months...the shelf life has since been extended to twelve months.

It is expensive, but then the ingredients are very expensive to buy separately. All the work has been done without you needing to have half a dozen different GF flours in the cupboard, taking the guess work out. Anyone wanting to improve the nutrients in their gluten free diet, whom may not be able to afford the flour, then maybe mix a bag with their usual GF flour to make it go further but also increasing whole grains, protein & minerals. The flour freezes well too!
The flour is wheat, gluten, rice, soya, bean, nut, gum & dairy free!
Vicki's website contains loads of recipes which she's developed with the flour - the baguette recipe is easy, quick and tastes amazing!
Which over the years I had always assumed were pretty much crucial to a successful gluten free flour blend. just by the fact every major blend in supermarkets uses them.
Last year I discovered an incredible artisan flour blend containing rice flours that I bake with on a weekly basis. I quickly learned to forget the horrible results I used to get, especially with bread, which before my results you could build houses with!
I embraced a new outlook where anything was possible, no matter how complicated it may look.
Most importantly for me was a new understanding. I have learned a lot.
I felt nothing could complete with this blend, till I tried Fairy Flour.
The fact I could get my hands on a bag or three in my case, at the Allergy Show at the Olympia London and meet Vicki was too good an opportunity to pass up.
I think Vicki thought I was mad getting straight into the kitchen to make a loaf in my bread maker as soon as I got home.
I love my bread so I was determined.
The first attempt was very good but I needed to tweak it, as you nearly always do.
On the second though I got the most perfect loaf imaginable, soft and moist. held to gather amazingly well and sliced. today when I sat in a quiet pictures enjoying a Brixworth pate sandwich using this loaf I was took a back by the lovely wholemeal taste. Edit: After trying a few more recipes I can confidently say this is the best gluten free flour I have used. It's easy to work with and tastes great. It makes the perfect crust for quiche with the shortcrust pastry recipe in Vicki's ebook - maybe even better than wheat! It's not just "good for gluten free", this is seriously good flour in its own right. I now look forward to making FFF flour a regular purchase.
I always feel left out when I make it for the family. So tonight I made pizza for them the usual way & used your plain flour to make mine. I expected to have to put a jacket potato in the oven as I'd anticipated the base failing (I've tried alternative flours before) but no! I've just had the most delicious little pizzas.
They've all tried a piece and really liked it.
