Useful for a number of things. For example: chocolate chip cookies, pancakes, even pizza dough.

Has a slightly gritty texture, characteristic of wholemeal flour. So the choc chip cookies have a crunchy texture, and pizza dough is as if made with wholemeal flour. There is a better option for pizza dough, but this is a useful item to keep in the cupboard for GF baking.

I have found that mixed with two thirds of ordinary white strong flour this makes excellent and quick to rise rolls with a great flavour and wonderful crust. It has a nutty and satisfying taste. I did also add a little stoneground wholemeal flour from our local mill but about one cup of this Teff flour does make a satisfying enhancement without restricting the rise. I use a total of 3 and a third cups of flour, 1 and a quarter cups of tepid water, 1 tablespoon dried yeast, 1 tablespoon sugar 1 tablespoon honey, teaspoon salt, 3 tablespoons olive oil and one teaspoon of cider vinegar. I let the yeast stand in the sugar and water for 20 minutes in the bread machine to start working, then add the rest of the ingredients and then run the dough recipe for just 15 minutes to mix it. After that I take the dough out of the bread maker and knead it for 3 minutes or so and then break onto a baking tray in 12 pieces, cover in cling film and prove at 80 degrees F in the top oven while the bottom oven heats for 20 minutes. Then it takes about 12 to 15 minutes to bake at 225. The whole process takes about 70 minutes and does not use too much power. The 12 rolls are eagerly eaten and taste delicious.

Good stuff. Made some teff pancakes - need a bit of practice! But they looked good and tasted good. Also this stuff I find is so easy on my stomach. I am feeling much better going gluten free and using this flour and have more energy. I chose Teff as I have had a constant mild illness and am going on the idea of inflamed intestines due to gluten. and maybe leaky gut syndrome. Feel better already and must say my tummy feels happier!
