As part of my healthy eating regimen, I eat A LOT of chicken, and it can soon get dreary. Most lunchtimes I'll have cold chicken (and/or other meats) along with a pile of greenery - but generally this is just fuel, and not a gourmet meal. Amanda's book will soon be changing that! As well as a number of healthy options, there are a decent variety of higher carb and calorie recipes, but on the whole all are simple to make, but full of delicious ingredients - in particular the Black Lemon Chicken Salad, which does indeed look to to be 'a meal fit for a king'! Overall a smartly formatted, great compilation of interesting and tasty meals

I have to say that I really enjoyed the variety of recipes contained in this book. The recipes are well-written, straight-forward and easy to understand. Most of these recipes are a great base to use to create your own recipes...after all, that's what cooking is all about!

Great book. I love how the author simplified the preparation, this would want you to try out a recipe at any given time. I can now enjoy variety of delicious, yet healthy chicken salads. Well written!!!

Author emphasizes right upfront the benefits of choosing quality chicken. There are wild sources and farmers near you. Grocery store chicken is a crapshoot because you don't know what was injected into the chicken while it was alive much less after it was slaughtered and packaged.

It can be a healthier alternative to red meats. Chicken salad is a great way to avoid wasting leftovers. It's also fast and easy to prepare which is important to the busy women I work with.

The Black Lemon Chicken Salad sounds delectable. I love cayenne pepper, lemon juice and the other ingredients called for in this recipe. The only substitution I'd make is instead of the regular vegetable oil I'd use peanut oil. Regular vegetable oil often comes from genetically modified safflower or corn so I don't trust it. If you're not concerned about Genetically modified foods then go with the cheap oil.

Also, some recipes call for canned chicken. The problems with canned foods are well-documented. I recommend substituting fresh chicken for any recipe that calls for canned.

I often have chicken left over, and in my family, no one likes left-overs! After weeks of it going to waste, a friend suggested that I make chicken salad out of it, so I searched for a good cookbook, and found "31 superb & easy chicken salad recipes you can rely on".

I actually didn't have much hope about my family eating left-overs even in chicken salad. But, I tried it and was happily surprised! The first recipe I made was Californian Chicken Salad, which they loved! Looking through the rest of the cookbook, I see lots of interesting options and feel much more hopeful about saving money, time and having my family eat more nutritiously with this cookbook.

If you are looking for creative ways to use chicken, check out this cookbook. I expect it's also wonderful for picnics!

My wife has been making a few recipes from Amanda's other book and said I need to try the salads out. She gave me a copy of chicken salad recipes and said since you love your salads you will enjoy this. Being a bit of a health nut and the salad king in the house I tried a few recipes out. Much to my surprise I found them very easy to make with such a great variety of choice. I have to say 31 is a good number as you can make a different one each day!

Have left over chicken? Why not try making Asian Chicken Salad? It is very delicious and the kids will love it as well. I am glad I came across Amanda Robson's 31 Superb & Healthy Baked Chicken Recipes You Can Rely On. Her recipes are not just nutritious but also quick and easy to prepare. I can't wait to try the other recipes on her book!
