Quite simply a how to on sous-vide cooking! Joan Roca & Salvador Brugues are world authorities on this form of cooking and hence no better people to receive instruction from! Simple to follow icons make it easier to decipher cooking methods! There are severe technicalities when it comes to health and safety in this form of cooking and best management practices are graphically outlined and diagramed for easy of use! I am a professional chef with 2 restaurants in the west of Ireland, I cook with sous-vide regularly and I found this a treasure trove, so if you're a pro or simply an eager enthusiast who wants to know more, dip your toe into the water bath that is Sous-Vide Cuisine by Joan Roca & Salvador Brugues.

this book goes into great detail about the advantages of vacum cooking, storing and to preserve food.also makes you you aware about the hygiene conditions the do"s and donts.you will want to experiment from the moment you start reading it.i would recommend it to any serious chef looking to move on with the times!

I ordered it in English but got delivered the French version, so it,s not tooooo easy to understand quickly.
The basics are present and it does illustrate well the possibilities of cooking using the vacuum packing technique

While there are recipes this is more of how this technique came about and the advantages. The advantages are large benefits to restaurants not so much for the home chef. I would recommend this to anyone thinking of buying the equipment. It may be an expensive book but it may save you money.
