Chia Green Lentil Salad with Roasted Peppers, Shallots, Nuts and Feta Cheese
- 2 x 400g Green lentils
- 1½ tbsp Sevenhills Wholefoods Organic Extra Virgin Raw (cold-pressed) coconut oil
- 150g thinly sliced shallots
- 150g drained roasted pepper cut into strips
- 3 tbsp white wine vinegar
- 1 tsp freshly squeezed lemon juice
- 2 tsp Sevenhills Wholefoods Organic Raw Chia Seeds
- 2 tbsp finely chopped parsley
- 2 tbsp chopped walnuts, pine nuts or almonds (optional)
- 100g feta cheese cubed
- ¼ tsp salt
- ¼ tsp pepper
- For the garnish:
- feta cheese
- chopped parsley
Prep Time: 8 mins, Cook Time: 10 mins
1. Stir the chia seeds into the lemon juice and vinegar and set aside while you cook the shallots.
2. Add ½ tbsp of oil to a large nonstick fry pan over medium-high heat. Add the shallots and cook for 3 minutes until softened. Reduce the heat and cook for another 5 minutes, stirring frequently, until the shallots are golden. Set aside to cool a little.
3. Rinse and drain the lentils and place in a bowl. Add the bell pepper strips, parsley, feta cheese (leave a few cubes for garnishing), salt, pepper and shallots. If using, stir in the chopped nuts.
4. Slowly whisk the remaining 1 tbsp of oil into the chia seeds / vinegar mix. Add to the lentil salad and stir to combine.
5. Keep at room temperature. Garnish with some of the feta cheese and parsley.
Why not try this salad with oven-roasted vegetables (whatever you have in the fridge) and slices of multigrain baguette.
Variation: top with cooked chicken breast, grilled tuna, halloumi or lightly seasoned tofu.

Kids Club Kampala, Uganda
UK charity working to improve the future prospects of children in the slum communities of Kampala, Uganda. Sevenhills Wholefoods worked with Kids Club Kampala to provide informal education classes to extremely poor children who would otherwise have no access to schooling, and supported the charity's third project in the Namuwongo slum providing 100 3-11 year olds with basic education. Children receive a hot meal and the centre remains open after school as a safe location, away from the danger and temptations of drug use, to do homework, ask questions, get help and receive food.
The Lunchbowl Network, Kenya
The charity initially operated one kindergarten school in Kibera, the biggest slum in Kenya, which provided for 55 children. Sevenhills Wholefoods helped the charity launch their second larger site accommodating up to 150 children. The Lunchbowl Network was able to provide the opportunity to learn and play in a clean, safe, stimulating, caring and respectful environment. Parents and carers readily recognised their children were becoming healthier and happier, less withdrawn, talking more English, and had improved reading and writing ability, evidence their lives were beginning to be transformed at an early age.
Network for Africa, Uganda
The charity works with communities in the aftermath of conflict and genocide, helping the forgotten survivors after disaster relief moves on. Sevenhills Wholefoods assisted the charity to extend their work into the war-torn Agogo District, Uganda, where people lived in overcrowded camps. People were encouraged to test for HIV, start treatment, and supported through better access to services, counselling and medication. Pregnant or breastfeeding women received advice and support needed to prevent mother-to-child transmission. Work was done in the local community to reduce the stigma surrounding the disease.

The seeds add an interesting texture to foods, but it because gel like and you can use them for thickening.
Great for fibre and protein!
The packaging is fantastic too, you don't need to replace the bad as the zip lock is well made too, it's actually a joy to close as the zip lock actually works in comparison to any other zip lock i've ever used.
The seeds are good quality and haven't experienced anything bad so far.
So, is this brand good? Well, almost all of the supplements I buy comes from Sevenhills as they are great value for money and come in good packaging.
A bit of online browsing on various health food stores, and this appeared to be the best price for the quantity. Not knowing what to expect, I was very pleased to find that this was a huge bag of seeds.
I like to use this over yoghurts, and in smoothies; as well as the energy ball recipe in Lean15. As only a tablespoon or 2 is required for these purposes, I can see this bag lasting a long time which is great.
Very happy, and will continue to purchase this Sevenhills product.
