Lovely simple & healthy veggie dishes

I'm a fan of Rose Elliot's cookery. Her recipes are imaginative and tasty and are made without lots of unusual ingredients, fancy techniques or needing lots of separate components to be brought together. She helps you put together great meals quite quickly, and what's more she's mindful of your waistline so doesn't use lots of butter or cream nor lashings of oil. I can see why the disappointed vegan reviewer's friends recommended this book as actually quite a lot of recipes are vegan or can easily be made so.
The sections I use the most are "alfresco entertaining" and "party time". Each of these eating styles can be problematic for a veggie but armed with these recipes you will find it easy to cater eg courgette & sweet corn cakes with chilli sauce or Jamaican jerk sweet potato for that barbecue evening and tiny tortillas, mini feta muffins and berry skewers for the party buffet.
