How much oil??

Firstly I have to say that I have only cooked three of the recipes thus far, Vegetable Handi, Chole Chickpeas and the Garlic Chickpeas. Each one required some adaptation for them to work, less oil, more onions etc.
One aspect that jumps from every single page is the inordinate amount of oil used for many of the recipes, some have as much as 10 tbsps of oil, even those where the base sauce contains no onions, this is far too much and completely unnecessary in my opinion.
This is just a hunch, but to me these recipes have been adapted from the dishes that they do in the restaurant, and, in whittling down huge pots to a dish that serves 4 they have got a lot of the quantities wrong. The Chole chickpea dish for example was way over spiced and swimming in oil.
