In addition to being an excellent product the customer service is outstanding. Ours stopped working a couple of months after we bought it (warranty is for one month). I emailed polyscience in the US to ask whether there was any way to fix it (the unit is sealed so you cannot really get into its guts), and they Fedexed me a whole new unit. A big thank you to the people at polyscience for this - cherry wood smoked roast lambs heart has become a personal favourite and I would not want to live without it.
This aside, I have been cold smoking for a number of years using things such as the Pro-Q cold smoker and self build burners, great when you've got a few hours and a decent quantity of food to get smoked i.e. side of salmon or a pork belly (mmm bacon), but quite a faff if just looking to do a bulb of garlic or some cheese, plus it's a nightmare to secure smaller foodstuffs within wide racked smoker. As such I figured this was worth a punt for smaller jobs, and to be frank a bit of master chef/ Heston inspired pretentiousness, it certainly impresses on this level!
A few things to note;
-Included wood dust is limited and you will get through it quickly, thankfully there are lots of great suppliers for dust on amazon and a litre bag will last you ages. On the dust side i'd recommend maple for the kind of usage this lends itself to; not bitter and some depth
-Set your expectations- you will not be smoking your own bacon or salmon with this.Think of it more as a smoke flavour provider rather than a true smoker.
-It gives a respectable smokey essence to most things, as you can imagine the more intense you want the flavour, the longer you need to leave foods in and the more doses of smoke the better. I use a large saucepan with a glass lid, put food into pot, fire up smoker, put tube under partially closed lid and wait till it looks like a Snopp Dogg party i.e. thickly smoke filled, then remove tube and close lid. In short: great gadget to impart a slight smoky flavour to your food, AND/OR a wow factor with a puff of smoke!
You should not expect this to be as effective as many long hours of smoking in a BBQ smoker, or to be able to compare with off the shelf smoked products.
You get everything you need with the kit including 2 pots of fine wood chips.
What you can expect is that this gadget will impart a superficial subtle smoky flavour to your foods. Some more than others. Generally speaking, I’ve found so far eggs fish and chicken take more of the smoky flavour than beef or pork or lamb. Possibly because fish and chicken are subtle in flavour themselves, and therefore any change in the natural flavour profile is more noticeable.
Otherwise, this is extremely easy to use. Follow the instructions, and off you go…instant smoke!
1. You are likely to burn yourself if using a match or a normal lighter. You are better off using a gas stove lighter…the ones with a long head.
2. If not careful, you will fill your room/kitchen with smoke! So go easy on the amount of wood chip you use, and taking care to smoke into a covered vessel where your food is. E.g. a metal bowl covered in cling wrap.
3. Use a container that is not likely to absorb the smoke flavour. E.g. ceramic bowl or stainless steel bowl. Some plastics absorb flavours…so they might become themselves smoky.
4. Give yourself 15 minutes at least of smoke absorption time. Don’t expect a smoky miracle after 2 minutes or so.

Realistically it is not a smoker as it does not preserve. It does however give you a fantastic smoke smell and taste in less than three minutes. Chicken leftovers are just great. My wife and I tend to eat the legs and thighs hot when roasting a chicken, leaving the cooked breast to eat cold later. Smoking them for a couple of minutes really alters the flavour. Cold cooked sausages are great too. Best of all, it is not messy and takes little space.
I even tried partridge and it was delicious. Smoked the whole cooked bird (split on two) for 30 seconds in a bag, sealed the bag and left it to rest for two minutes et voila!
Also very economical as the two sample pots will last you a dozen uses each. I ordered a 500gm of Maple but I won't be using it for a while.
