Champagne's geographical location engenders capricious weather. For this reason, since their foundation in 1849 Pol Roger have observed the tradition of not releasing a vintage-dated champagne unless the climatic conditions permit the production of grapes of outstanding ripeness. A vintage champagne must, above all else, be a balanced champagne. This balance depends on the right blend of healthy grapes, a good potential alcohol and correct acidity. The first criterion for declaring a vintage wine is its capacity to age. Devotees who have the patience to age their champagnes are rewarded with a more complex and richer wine.

Pol Roger Sir Winston Churchill 75cl
The composition of the blend is a closely guarded family secret but is dominated by Pinot Noir with the remainder made up from Chardonnay. The grapes are all from Grand Cru vineyards which were under vine during Churchill’s lifetime and it is only ever made in the very best vintages. It is made in a style which Churchill himself favoured: robust, mature and long-lived.
The wine is a deep golden-yellow colour with a continuous thread of lingering bubbles. The elegant nose delivers intense and complex aromas, dominated by enticing notes of dried fruit, toasted almond and honey. On the palate the wine is full bodied, boasting a powerful, rich structure, yet well-balanced with a refreshing acidity and flavourful notes of citrus fruit. The finish shows a remarkable length, with creamy notes of butter combined with rich fruitiness of Mirabelle plum and tart, ripe pear.

The definitive house-style, composed from 30 still base wines drawn from at least two vintages, and the three varieties of Champagne, Pinot Noir, Chardonnay and Pinot Meunier blended in equal portions.
The Pinot Noir comes from the villages of the Montagne de Reims and contributes body and character; the Chardonnay comes from Epernay itself and the Cote des Blancs and provides lightness and elegance; the Pinot Meunier comes from the Vallée de la Marne and provides youthfulness and vigour. The perfect apéritif champagne which we never release until it is at least three years old.

Champagne Pol Roger Cellars
The Maison Pol Roger cellars run for 7km and are on three levels, the deepest known as the ‘cave de prise de mousse' at 34m below street level. As the name suggests this is where the wine undergoes its secondary fermentation in bottle. The fact that this deep cellar is at 9°C or less, rather than a normal cellar temperature of 11-12°C, prolongs this fermentation and contributes to the quality and particular style of the wines and their famously fine bubbles.
