Even the most organised and skilful cook can find themselves pressed for time when entertaining. The secret lies in clever pre-preparation. This might mean having a bake or a stuffed roast assembled in the fridge, ready to be popped into the oven or having an impressive sauce or topping pre-prepared to provide a flourish to an otherwise straightforward dish. In "One Step Ahead" best-selling author Mary Berry gives the answer for the time-poor cook , providing 100 recipes devised to be either worked through in the usual way or taken to a 'holding point' - a stage that will give you a head start when putting together a meal in limited time. Shortcuts are given wherever possible, and Mary helps the reader through any tricky techniques in her usual, inimitable crystal-clear manner. The recipes are divided into Party Nibbles and First Courses, Main Courses, including meat, poultry and game, fish and pasta and rice. Vegetable Dishes, Puddings and Desserts, and Baking are also included to make this the essential guide to inspire confident cooking in a way that makes entertaining fun.

There is little or nothing particularly challenging in this book, but that's not the point which I believe is to enable us to get ahead of ourselves so that we can, say, prepare in the moring, hit the shops in the afternoon, and have a good and nourishing meal in the evening with little further work.
I tried two recipes yesterday, breaking at the points suggested by Mrs Berry. Apart from bacon (which in small quantities is an honorary vegetable) I don't eat meat, so I didn't taste the baked pecan chicken, but I was told that it was fine. The tartiflette was fabulous. We all loved it and I am sure that It will be on family menus for a long time to come. I increased the quanties by about 25% to match supermarket packs and added a few minutes to the cooking time. One little niggle. How does one grate Taleggio cheese which has the consistency of brie? I ended up crumbling it but in future I think I will try ready grated mildish cheese.
Well worth the money!
the originality of the recipes contained in it. Amazon have done it again. This is an excellent book.
