About the Author

Olia Hercules was born in Ukraine and lived in Cyprus for 5 years before moving to London to study a BA in Italian language, followed by an MA in Russian and English. A number of jobs followed before her interest in food as an amateur reached its apogee and she decided to retrain as a chef at Leith's School of Food and Wine. She kicked off her culinary career working at London's Union Market before landing her dream job as a chef-departie for Ottolenghi's. After having her son, and filming for The Food Network, Olia has been writing for Sainsbury's, The Recipe Kit, and the Guardian. Olia is the Observer's Rising Star in Food 2015.

Meet Olia Hercules

Olia was born in Ukraine and lived in Cyprus before moving to the UK to study a BA in Italian, followed by an MA in Russian and English. She worked as a reporter for Screen International before her interest in food as an amateur reached its apogee and she decided to retrain to be a chef at Leith's School of Food and Wine. She kicked off her culinary career working at Fulham's Union Market with Aaron Craze before landing her dream job as chef-de-partie at Ottolenghi's. After having her son, and filming for The Food Network, Olia began writing for Sainsbury's, The Recipe Kit, and The Guardian.

Beautiful photography, lovely looking food with great anecdotal input, this book is an absolute steal at this price.
Having spent time in Eastern Europe/ Balkans, the influences are easy to spot - in which direction might be putting my head above the parapet....
But there are also flavours from the East coming in from the other side.
A really engaging style and an obvious passion for food and family add to the attractiveness of the offerings in this lovely book. You could buy it, enjoy it and discuss the contents without putting your foot in the kitchen. However, you would be missing out on some delicious food - Lamb and Prunes are perfection. People who don't like fruit and savoury won't appreciate some of the amazing combinations. Chicken BBQ'ed with apricot jam -Inspired! Lovely soups and stews. The kids love the desserts and pastry. The drinks section is really nice. As I said above some of these recipes aren't new to me but many are, and I'll try them all.

If Olia set out to paint a cultural and historical picture through food and family she succeeded admirably. Another volume......

I am in love with this book. I am Russian and I found this book very authentic and very valuable. Not only it contains Ukrainian recipes, but also recipes from other ex USSR countries such as Armenia, Georgia and Azerbaijain. Of course, Olia adds some new tricks - roasting vegetables fot vinaigrette (traditionally, we boil the vegetables). Or preparing stuffed cabage leaves with savoy cabage instead of the usual one.
I made pyrozhki today, or stuffed buns with potato and with eggs and spring onion - turned out amazing.
If you live in the UK, you would have to go to Eastern European grocery shop to get some of ingredients though.

I really enjoyed this cookbook. The recipes are a solid combination of bright and fresh, as well as home-y and warm, with a good variety of complexities levels as well. One thing I will say is that the entire book seems to have a number of errors, with entire steps just blatantly missing from recipes. For example, the chicken broth and dumplings recipe suggest a whole chicken, sectioned into 8 chunks, is boiled as part of the broth. It does not have a step suggesting you pull out the chicken parts, de-bone and shred, despite the accompanying picture showing just that. I would recommend it in spite of the issues - read your recipe before and consider where you may need to do some googling to fill the gaps in some of the doughes, etc - but subsequent releases need a serious review and edit.

Amazing style, photos, recipes.

This is not just a cookbook but a journey trough memories, places, times, and countries, that being said take a moment, enjoy every part of it.

For me, reading trough it, totally made my day, sparking fond memories of my own grandparents and I am glad such books are still published.

For Ireland, if finding ingredients will seem hard, a friendly Lithuanian/Polish shop will help a lot, and even some Halal Groceries (in Dublin at least) will do.

But once that part is done, go for any of the recipes in the book, all of them are amazing.

For any of them involving in any way an open fire, try to do just that since taste will change dramatically albeit finding a place for your fire might again take some time.

A nicely illustrated book packed full of interesting authentic recipes from Ukraine and beyond. Quite a few of my personal favourites are here; plov, pickled tomatoes, pierogi etc. If you someone who thinks East European food is all about potatoes and beetroot, then this his is a must read. Yes they are there, but not as you imagined.

Love it. A complete new Style on cooking that I have not seen before. This book and the area of Ukraine has opened my eyes to using new ingredients that we just throwaway here in the UK. It's frugal cooking at it's best. Recipes such as Sorrel Broth, Beetroot & Prune Salad & Tommates stuffed with cheese & herbs.

This is a well written, clearly explained book which is enlivened by the author's personal childhood experiences. It's also a great introduction into a cuisine I know little about. The Ukrainian beetroot soup was easy to make with a precisely explained procedure and the final result was delicious as well as visually appealing. I look forward to trying more recipes, provided I can find the ingredients.

Beautifully made book with wonderful illustrations and large number of recipes from Eastern European countries. I tried to cook several dishes, however I found that I need to adjust recipes slightly especially when it comes to dishes containing flour. So it was a bit of trial and error. Still enjoyed using this book, as it inspired me to cook something new.
