This is an excellent Cook-book focusing on the more traditional aspects of Indian cookery, as opposed to just curry dishes, which is where in my opinion many Indian cookbook's fall down. Madhur Jaffrey relates many of the fantastic recipes in this book to her own experiences growing up, learning to cook and preparing and serving these dishes to her family and friends. The recipes are comprehensive and easy to understand with additional information provided in most instances, as to the origins of the dish, how they were traditionally prepared and what food compliments the meal best. I would recommend this book to anyone who is already semi experienced in Indian cooking, who is looking to broaden their knowledge to encompass more exotic ingredients or less well known dishes. My only criticism is that there are not enough photographs of the completed dishes, to allow an easy reference for the reader, when deciding which sumptuous meal to create next.

I would definitely recommend this book to anyone who likes Indian food. The nearest Indian restaraunt is about an hour away from us so I wanted to learn how to make the stuff I missed here at home.
I've tried about 16 of the recipes and they have all been
delicious.The tandoori chicken in a butter sauce is fantastic for a dinner party ; the vegetable dishes are great
and the naan bread is awesome.You don't need any fancy equipment to make these things either. The instructions are dead easy to follow and the accompanying information about the dishes is very interesting.

As my title suggests, if ever you were only allowed to own one single Indian Cookery book then this should be it. Recipes are clear and easy to understand, impossible to go wrong and absolutely delicious. There is something for every pallet (spelling) and taste (providing you like Indian of course!). There is a wide variety of dishes based on fish, chicken, lamb, vegetables and rice dishes. There are also accompaniments and even a few deserts. I've tried nearly all the meat dishes and haven't been disappointed yet. I've bought plenty of other books since to expand my recipe selection but always come back to this one. The original and best.

If you like currys, this book is a must in any kitchen. I used to have one and my ex decided to keep it, so I had to go and buy myself a new one. I found it was out of production, so thank goodness I found in Amazon. It was used, but I have to say I received it in pristine conditions, well worth it. In fact I'll ordering another one for my son. Delicious recipes!

Though we have had this book in our kitchen library for many years, i only discovered it last year. I cannot say how much i am in love with it and it was the only book i wanted to take with me when i left home to start studying abroad. This review is from memory unfortunately, as my father could not be persuaded to part with it and wanted it for himself!

Indian cookery is not simple, one must be forwarned about this. It will take you a lot of time to cook most of these dishes, especially the meat ones.

However, there is not one recipe that i tried and wasn't extremely tasty and rich in flavour. From simple, light dishes, to festive birianis (try it, it is superb), to whole legs of lamb marinated and mellowed for one day, everything here is sure to impress.

Follow closely her recipe for cooking simple basmati rice. it works perfectly and will cook you the best basmati you've eaten, exactly as it should be.

Her lamb dishes are exquisite. i would suggest following her instructions in the beginning of the book and not use boned meat, but leave the bones in. Sucking the sauce and the meat from the bones is a delight i wouldn't want to miss.

Buy fresh, good quality spices, this is essential. buy cumin seeds and coriander, and then grind them in the mortar and pestle instead of buying ready - ground spice mixes from supermarkets. I always went to the spice shops to buy all spices, even if it was far from my home.

Get this book. it far exceeds every other indian cuisine book i have ever seen.
