Asia salad with chili shrimp
For the dressing:
1 tsp. sesame seeds, 1 bunch coriander leaves, 1 clove of garlic, 1 red chilli, 3 tbsp. fish sauce or soy Sauce, 2 tbsp. sesame oil, juice of 2 limes,
For the salad:
1 small pack of glass noodles, 1 cucumber, 2 thick carrots, 1 unripe Papaya, 12 Prawns (with tail, without head), 2 tsp. sesame oil
Step 1: Roast some sesame in a pan without oil. Finely chop coriander, garlic and chili. Mix some fish sauce, oil and lime juice to make a dressing. Add sesame and the garlic/chili mixture to it and let it soak for at least 10 minutes.
Step 2: Pour boiling water over the vermicelli noodles in a bowl and let it soak according to the timing on the packaging. Then let them drip dry in a sieve.
Step 3: Peel cucumber, carrots and papaya, then use the blade for cutting spirals. Place everything, including the vermicelli noodles into individual containers and mix well with the dressing. Let it all soak for an additional 10 minutes and then organise the individual ingredients separately onto a serving plate or into a bowl. Put 3 shrimps onto each skewer and fry them in hot sesame oil, then add to the salad.
Cucumber salad nests with smoked salmon
For the dressing:
1 tbsp. agave syrup, 1 tbsp. whole grain mustard, juice of a small lemon, 4 tbsp. neutral oil, salt, pepper,
For the salad:
2 cucumbers, 300 g, sliced smoked salmon, 2 sprigs dill, finely chopped
Step 1: Mix agave syrup, mustard, lemon juice and rapeseed oil to make a dressing and add salt and pepper for flavour.
Step 2: Wash the cucumbers, then use the blade for cutting them into cucumber spaghetti. Add the dressing, stir it and let it soak for a little while.
Step 3: Place the smoked salmon onto your plates. Twist the cucumber spaghetti into little nests using a fork and place them on the salmon. Divide the rest of the dressing among the plates.
Fresh bread or a baguette go perfectly with this dish
Low-Carb Courgette Slices
500 g courgettes, 3 eggs, 200 g grated cheese, 1 clove of garlic, 1 tbsp. chopped flat-leaf parsley, salt, pepper
Step 1: Wash the courgette and slice using the course Spaghetti blade.
Step 2: Preheat the oven to 200 °C.
Step 3: Generously season the courgette spaghetti with salt and pepper and let stand for about 5 minutes.
Step 4: Beat the eggs and mix with the grated cheese, parsley and crushed garlic.
Step 5: Combine the courgette with the cheese-egg mixture, spread evenly on a baking try covered with baking paper and cook for approx. 25 minutes.
Courgette Tagliatelle a la Carbonara
For the sauce:
500 g sour cream, 1 clove of garlic, 20 g Parmesan, 1 pinch salt,
For the vegetable pasta:
8 rashers Bacon, 4 courgette, 1 pinch pepper
Step 1: Fry the bacon slices in a non-stick, non-greased pan until crispy, then remove and let them drip onto some kitchen paper.
Step 2: Heat up the sour cream in the same pan on a medium heat, then finely chop some garlic and add it to the cream along with your Parmesan. Salt the Parmesan mixture if necessary and let it cook for approx. 3 minutes, until the sauce thickens.
Step 3: Wash and clean the courgette, then use the large blade on the spiral cutter to cut tagliatelle. Add the courgette noodles to the sauce and stir them until they are heated through, but not soft. This leaves them al dente.
Step 4: Arrange them onto plates and garnish with the crispy bacon and freshly ground pepper.
