(Everyone knows you SHOULD eat whole grains, but it can be tricky to PREFER them!) This book shows how to make truly delicious, truly light breads in an enormous variety, all from (yes!) whole grain--and shows how to fit the doing of it into your schedule, with or without mechanical aids. I must say, it is a beautiful book, with original woodcuts throughout. The directions, especially in A Loaf for Learning, are detailed, clear, and they work.
Fans of Carol Flinders' writing will especially relish her long introductory essay. --This text refers to an out of print or unavailable edition of this title.
