Being a Former Chef I've got to say I hate the steels chefs use, the noise the technique, it's a pain.
But finding a sharpener that can put an edge on a working kitchen knife that's as good as a steel is hard. Have tried many over the years including various Lansky models. But never had the desired result that I was after.
After reading review after review of many off Amazon, I came across this one. I've got to admit I'm impressed. The build quality is sturdy and solid, doesn't slip when in use and the results on the blades are sharp as using a steel. We're not talking standard knives here, we're talking paring knives, filleting knives, French cooks knife, to name a few. They've all been through it and come out of the 3 stage sharpener with neat edges that can shave the hairs off your arm with ease.
