Ever turned out a too-pale flan case, or a French stick lacking a little crunch? We're proud to introduce our brand new perforated baking range, which takes the benefits of flexible, non-stick silicone bakeware to a whole new level. Each piece is micro-perforated for increased air flow so moisture can escape, which allows for bread and pastry to be cooked evenly with a crispier surface, ensuring bakery-fresh results every time. Combined with silicone's easy-to-clean and easy-to-store nature, PerfoBake is a real joy to bake with. Excellent heat conductivity & air circulation. Amazingly non-stick - food just pops out & cleaning is easy. Flexible & easy to store. Oven safe up to 240°C. Microwave, freezer & dishwasher safe. Helping to achieve golden, crusty baguettes whether home-made or shop-bought part-baked, it holds up to three and can be folded neatly for storage - so much easier to put away than a metal baguette tray.

It is light and flexible and easy to store away. It worked well for me - I put 2 baguettes in it to prove and then cooked them in it placed on a baking tray - as per normal.I do not quite understand why another reader thought a baking tray would not be needed.
I am not sure that it would really take 3 baguettes - unless very thin - otherwise I think they might 'overflow' into each other.
This was my first attempt at making Paul Hollywood's baguettes and although I found my oven was a little too hot and the bread was a bit overcooked it tasted wonderful and had a genuine French baguette crispy crust!
I have given it 4 stars because never having used a baguette tray before I have nothing to compare it with. Maybe I should have given it 5! I shall be using the baguette tray again very soon.
The tray is flexible, and allows a lovely all round golden crust, and the baguettes release without sticking.
I recommend flouring this 'perfobake' well before use, and using a suitable sized flat perforated baking tray underneath as a support.
After use, I usually just give mine a shake and a brush before putting it away - it's never really needed washing, but if it did, I think I'd just give it a light wash with a mild detergent and let it dry throroughly before storing.
It's an indispensable piece of kit - I bake bread a couple of times a week, and this perfobake turns out fabulous baguettes which are just right for eating with soups, hotpots or simply cooked fish and salad.
It's lasted years, and although it's starting to look a bit tatty, still delivers perfect, crusty baguettes. Highly recommended.
Having said that, I didn't find it that easy to use. I think you really need a baking tray of the right size to get the best use out of it. It would be better if it has a little more rigidity. When I was putting it on the tray it had a mind of it's own and was very difficult to get it to stay in shape.
I wouldn't buy it again but fully accept that others may have a different opinion of it.

They are convenient and easy to use but the silicone base retains all the moisture so the top of the baguette crisps but the underside stays softPublished 21 months ago by Arc
