A welome volume on changes in food perceptions over time. Fischler presents ideas on several levels ranging from direct commu nity examples to the various dimensions of the intertwining of familiar tastes with concerns about tasting new foods. The omnivores' dilemma takes us into analyses of how society has been adapting over time to the challenges of finding and incorporating new approaches to gastronomy given social needs, environmental opportunities, at both the global level, as well as at local community levels.
