-use an oil/fat to cover the inside of the pan(best is vegetable shortening as it sticks to the pan)
-leave upside down in a hot oven for an hour or two
-switch off and leave to cool as these pans get really hot, don't try to grab the handle or anything I learnt the hard way and am now missing a few fingerprints
I would say though I haven't had great success with eggs, I probably haven't taken care of it enough to be super non-stick idk. But this might not be the pan for fried eggs, I use a little round non-stick thing for one egg. But you never know it might work for you.
I will also say, it is fairly heavy, it's ok by me, i can just about have the strength to lift it one handed and scrape it empty with other, but not for very long. fine to lift with 2 hands, but if it's hot you will need oven gloves or some kind of silicone holder, I've just ordered one. That's part of what is great about cast iron is that it heats very hot all the way around, so the handle will get almost as hot as the base after a while.
Seasoning the pan is very simple - there are plenty of guides online, but basically just rub it with oil and leave upside down in a hot oven a few times. I took the opportunity to put it in the oven every time I was using it for something else. I had always thought that a pan needed to be reseasoned after every use, but that doesn't seem to be the case, and it just needs to be washed in soapy water (don't scrub). It is much lower maintenance than I'd thought and I use it more often than I thought I would.
You have to commit to looking after these pans, so no washing up liquid, not for the dishwasher and they have to be dried preferably on heat, but the rewards are fab.
I got this to replace one I'd had for years and given to my daughter.
You need to give the pan a good hot scrub with a scourer first to remove the rust protection coating, and then rinse well. Heat it on the hob until warm and dry, then pour on a little oil. The trick is not to use too much oil- a tablespoonful is plenty. You are aiming to make it glisten with no runs. If you put too much oil on, it won't season properly and will develop a thick plasticky goo on the surface instead. Heat the pan until it smokes lightly and wipe the oil off. Apply a little fresh oil and repeat the heat and wipe routine. You are aiming for a slightly shiny appearance each time.
When you wash the pan, never let it soak, give it a quick, hot wash with very little detergent and rinse straight away. Dry it by warming on the hob briefly and give it a light smear of oil if the surface looks dry. Store it where it won't pick up any dust.
Never throw away a neglected pan. You can restore it with a scrub and seasoning again.
Because this pan is nice and smooth inside, the seasoning happens quickly. After a couple of shallow frying uses, I made pancakes in my pan today and there was no sticking whatsoever. Better even than a non-stick pan.
Cast iron is non toxic and can even boost your iron intake slightly, which is healthy.
Its heavy solid, stable on stove and quick cooking (fuel efficient?).
It gets hot and the shortish handle also gets very hot so you need oven glove/cloth as teatowel (I did use) isnt ok!
Preparation to seal pan is fine and after cooking in lots of cases it cleans like a non stick surface, but if there is food residue just give it a scrub.
Good value for money, but unless you have lots of pans check your sizes.
NOT IN INSTRUCTION but my way - after washing I usually dry pan over medium heat but if I see parched/dried out areas I then put about 1/2 teaspoon of cooking oil in and swirl it around, removing any excess with paper towel.
Instructions say to reseal from time to time so I dont wait that long.
I also when first using pan warm it and again slighty lubricate with oil and then wipe off, as before.
But I do this on all my steel or cast iron pans, thats a wok, small fry pan and a griddle.
I dont do this on my fancy stainless steel pans , but these tend to be redundant, because they stick a lot and need cleaning with wire wool. The saucepans are ok.
