The encapsulated base material of the pan effectively distributes the applied heat from below, reducing 'hotspots' which can cause localised burning of the contents. This is particularly important when used on an electric or induction hob to cook foods with a low moisture content which easily burns. These judge pans are quite resilient, but don't use steel wool or similar metal-based scourers, only nylon scourers etc.
I mainly use this pan for cooking vegetables or making gravy using a 2kW induction hob, but you could use it for anything you can think of really ! It's a nice sized, deep pan that produces a good simmer using induction. The glass lid doesn't have a vent hole, instead you line-up the draining holes in the sides of the lid with the pouring spouts of the pan to give the required amount of venting - thus avoiding any spillages !
Draining is made easy by aligning the draining holes in the sides of the lid, with the pouring spouts of the pan and holding the lid firmly against the pan whilst tilting it. The knob on the lid is easy to grip and doesn't get very warm, so you won't burn your fingers. The glass does get hot so try to avoid touching this whist draining. Pouring (with lid removed) is more controllable thanks to the two spouts on either side of the rim of the pan.
I've had problems with handles coming loose or even detaching from the side of some cheaper brand pans I've owned. I haven't experienced any similar issues with this and other Judge-brand saucepans I own.Read more ›
My next purchase will be the Judge Vista frying pan to complete my collection. I have heard these pans last 25 years plus, I know I am only 6 months in but after the battering my pans have had I can believe it.
