Joseph Archibald has been a passionate "foodie" for years now. For the past 24 years he's been committed to a vegetarian diet. Some 15 years ago, his father who resides in Edinburgh, Scotland, became chronically ill and was diagnosed as having celiac disease, hence Joseph's concerns for the gluten-free diet.
For almost 4 years now, Joseph has resided in South East Asia, enjoying the delightful cuisines to be found within that part of the world. More recently however, due to lack of kitchen space, he's developed an intense passion for crock-pot styled cooking and freely admits that currently most of his cooking is crock-pot focused.
