These knives are outstanding quality and good value. I saw some in my local store. I liked the feel so bought a couple to try and now I have a whole drawer full! At least one of nearly all the different types. This review applies to all the knives I have tried, the cooks knives (both sizes), the Santoku knifes, the steak knives, the paring knives and the bread knife etc.

The blades are similar to other quality stainless steel knives. The important difference is the handles. Firstly, they are curved and fit the hand better than other knives including other knives made by Stella. Secondly, the handles have a high friction rubber or rubber like coated surface. This is a huge advantage. It means you can hold the knife firmly with less effort.

The instructions suggest hand washing or to remove them immediately from the dishwasher. I wash these knives in the dishwasher, they withstand the process. No damage after months of use. Since I don't remove them immediately, it is as well to arrange them so the water drains off, otherwise standing drops of water can leave a mark that requires stainless steel cleaner to remove.

The reason I bought these is that the Global knives I have can not be washed in the dishwasher. (The black dots on the handle come off. This ruins the design.) I dislike hand washing so I thought the Stellar James Martin knives would be better for everyday use. In fact, as much as I like the quality of Global knives, these are more convenient to hold, cut as well, can be placed in the dishwasher and cost about one fifth the price. I think they are a bit of a bargain. Global knives look nicer, but these Stellar knifes are a much better choice in practice.

Seems very good value really (around £11.50 January 2012).

I have never used one of those very expensive (often German or Japanese) knives so I don't know how this performs in comparison to them, but so far this is the best quality knife I have owned. It is heavy and the metal of the blade is thick, giving it a solid, capable feel. Have just tackled a swede with it and it coped well.

The balance is fine and the rubbery grip is performing well. Whether or not the grip will last only time will tell. The blade has a 'heel' near the handle which I don't usually like but it's not causing any problems so far and if it does I will file it down/off. If you have a problem with it many knife sharpening companies will remove it for a fee.

The shape of the blade means you can use the tip for cutting onions and so on, which is what I wanted. My previous knife curved up too much at the end but this one has a straighter edge all the way.
This means that it's possible to chop onions in a more 'professional' manner (like they do on telly...is what I really mean!)

Sharpness wise the knife is performing well too. Straight out of the packet it's fine but I have freshened it up a bit more with various bits of equipment. This seems easier to sharpen than my old very cheap (£5) supermarket 20" knife. Whether this means the metal is harder or softer I'm not sure but the blade seems to react better to a 'traditional' sharpening steel than the cheaper knife, which needed a diamond steel Diamond Steel 12" oval sharpening steel.to really freshen it up.

I'm surprised at how easily the knife goes blunt even with just vegetables. Having said that, the build quality is great and if you have a sharpening tool, you shouldn't be disappointed at this price.

I like them and they function well enough but what surprised me is that they are not particularly sharp. I have some cheaper stainless steel knives which are sharper and my Victorinox knives knocks spots off them. However these knives are attractive looking, comfortable in the hand and very well balanced especially this large cooks knife. I usually struggle with a large knife but this feels fine. However I imagine I will be needing to sharpen them soon.

I have three of this range of knives, the large & small cook's knives and the utility knife. I picked them up cheaply in TK Maxx to stock the kitchen in a temporary house I was living during a job relocation - I already had some good knives at our original home but as we were spending part of each week at each house it wasn't practical to take everything from home and I didn't want to spend much on knives I didn't expect to use in the long-term.

I must say I was very impressed by the knives - the blades are solid, no flexing like you often get with cheap knives, and the comfortable handles are very nicely balanced. The blades are easy to sharpen too. The instructions say that you should handwash or remove from the dishwasher immediately. I generally throw the knives in the dishwasher and they don't get removed until the following day but, after 18 months of use (I liked them so much I carried on using when we completed our move) they are showing no signs of being affected by dishwasher abuse!
