Some good recipes. A pity the Kindle description did not mention that the recipes require Morton Tender-Quick, an American ingredient that I am sure was not available to the inventors or early makers of Pastrami and is not available to me. The book says you must use it. So don't buy this if you can't get that ingedient. A pity, too, that the one link that doesn't work is the one to write to the author! Wouldn't have needed to write this.

I was raised on good deli food, and until I saw his recipe, I had never even considered making pastrami at home. I made his pastrami recipe, and not only was it far cheaper than at the deli, it was delicious.

This is a well-written, properly formatted Kindle ebook with an active TOC. It contains several recipes, not only for making pastrami and corned beef but also for beef tongue, chicken liver pate, homemade rye bread, etc., along with serving suggestions and a wealth of other useful information. All of the recipes and instructions are clear and easy to follow. It is a welcome addition to my Kindle cookbook collection and I recommend it to others. The only criticism I have is that it should have included information on food safety and safe food handling. As a former food service professional, I didn't really need this information but for an inexperienced home cook who's curing and processing meats for the first time, this information would have been a worthwhile addition.

I have never attempted anything like this, but after reading David's recipe for homemade Pastrami, I had to give it a try.Let me say it was delicious!! We have made it quite a few times and last time made it, froze it and drove it 1300 miles for a family reunion and it was the biggest hit! The recipes are easy and quite amusing to read. Thanks for starting us on a family tradition. :)
